don’t forget the black eyed peas!

Fun fact #1- In the South, we eat black eyed peas every New Years Day for good luck. Combine them with collard greens, which represent money, and you’ll be set all year long!

Fun fact #2- During the Civil War, the town of Vicksburg, VA, ran out of food while under attack. Apparently, the residents of the town discovered black-eyed peas and thereafter the legume was considered a lucky food.

Fun fact #3- I’ve got my ingredients in stock & my menu planned for 1.1.13. Do you need to go shopping today for your good luck peas & collard greens tomorrow tomorrow? Need a fresh, new yummy recipe?

Here’s my plan: Collard Tacos with Black Eyed Pea Salsa!

for the salsa, you’ll need-
1/4 tsp each: sea salt & pepper
1.5 cups cooked black-eyed peas
1/2 cucumber, seeded & cut into 1⁄4-in. pieces
3 scallions, chopped
1 jalapeño pepper (seeded for less heat, if desired), finely chopped
1/2 cup(s) fresh cilantro, chopped
2 tablespoon(s) fresh lime juice
1/2 to 1 avocado, diced
2 tsp olive oil*optional for those who really tolerate nightshades- diced tomato to tastefor the ‘taco’ use cleaned & washed collard leaves! Can also use non-gmo corn tortillas if desired.

Combine all ingredients for the salsa, stirring with a fork to combine all ingredients thoroughly. Scoop salsa into collard leaves & Eat it UP!
