… Buttercup would make you waffles! But I don’t (for now) so I’m just going to have to share my latest creation for enjoyment on your own.
This is an updated version of my previous adventure… bummer I forget to at least take pictures! Too busy enjoying a new favorite. These waffles are more flavorful and have a yummy texture.
Here’s what you’ll need:
3/4 cup + 2 T brown rice flour
1/2 cup garbanzo flour
1 t baking powder
1/2 t baking soda
1/2 t salt
1 cup rice milk (or milk of choice)
1 T maple syrup
1/2 T vanilla extract/powder
2 T grapeseed/canola oil
1/2 cup blueberries *optional
Don’t forget to preheat your waffle iron!
Sift together all dry ingredients. Paddle wet ingredients in with a spatula. Batter should be slightly runny and easy to pour.
Make sure to spray your waffle iron so the batter won’t stick. I poured about 1/3 cup in each side of my rectangular waffle iron but each iron is different, so use your judgement. You’ll know it’s too much if your iron starts to overflow.
Depending on your iron, check the light for doneness or wait about 3 minutes, give-or-take a little bit.
Enjoy with whip cream, maple syrup, strawberries and/or any of your favorite fruit and toppings!
